How a $5,000 dental clinic became Minneapolis' hottest food truck success

A small food truck in Minneapolis has turned a second-hand dental clinic into a thriving business. Flo's Eats LLC, run by JT Tarwai, Isaac Flomo, and Eddie Adegeye, now serves South American dishes across the city. The venture began with a modest $5,000 investment and has since grown into a profitable operation.

The idea took shape when the trio purchased a used mobile dental clinic in 2023. For just $5,000 (around €4,650), they converted it into a food truck specialising in South American cuisine. By June 6 that year, they had secured an operating license, and a soft launch followed a week later in Minneapolis's North Loop neighbourhood.

Today, Flo's Eats operates five to six times a week during peak season, which runs from March to November. The menu features standout items like a $17 buttermilk fried chicken sandwich and an $11 grilled cheese on garlic bread—both top sellers. The business has also landed spots at high-profile events, including the Minneapolis Aquatennial on July 4th and the annual Monarch Festival.

Annual revenue now reaches $240,000 (approximately €223,000). Despite its success, the company has not expanded beyond its original food truck in Minneapolis.

Flo's Eats LLC continues to serve the Minneapolis community with its unique menu and mobile setup. The business remains focused on its single food truck, operating seasonally and at local festivals. Its growth from a $5,000 investment to a six-figure revenue stream highlights its steady progress.
